Vegan Lentil Sheperd’s Pie with Parsnips Mash

We grew parsnips this year so I had been eyeing this recipe from Food 52 since the summer. I found it perfect to make for our Christmas dinner. We had quite a lot of B grade parsnips so we went all out and made the mash with just parsnips and did not cut it with white potatoes. It turned out really well.
