Hakurei Turnips are unlike any other turnips. They are so sweet and crisp you can eat them like an apple! I suggest eating them raw as much as possible. If they are fairly fresh(4-5days) you won’t even have to peel them! Try out this recipe!
7-8 medium sized Hakurei Turnips, grated
1 handful mizuna, chopped
4-5 shallots, minced or 2 tsp minced red onion
1 apple, peeled and chopped
1/2 carrot, grated
1 tsp fresh dill, chopped
1/2 cup vegenaise
2 tsp flavored vinegar
1tsp Dijon mustard
1 Tbsp hemp or poppy seeds
salt to taste
In a large bowl mix all the dressing ingredients together. Add the vegetables and herbs and mix well. Allow to chill 1-6 hours for the flavors to meld together…or dig in right away!
