Mizuna and Shrimp Salad with Udon

Mizuna is a Japanese Mustard Green with a mild, sweet, tangy flavor. This tender leaf has been cultivated in Japan since ancient times. Mizuna translates from Japanese as water or juicy vegetable. Mizuna is loaded with vitamins and minerals and makes an excellent  salad green. It is also very good in stir fries or soups.

On a very hot day, I like to eat cold food. This is a fast and easy dish for such a day

Ingredients(Serves 2)

*Udon for 2 people

*A bag of Mizuna ( 1/4 pound)

*12-16 Shrimp, peeled and deveined

*Sesame dressing(see below for recipe)

*optional* A handful of edible flower mix( In picture, borage flower, sunflower, anise  hyssop leaf, yarrow leaf, lime basil, mizuna flower, dill flower)

Preparation

1. Boil the udon according to directions on package. Make sure to rinse in cold running water after boiling so to keep al dente, cold and non-sticky. Drain and set aside.

2. On a large plate, make a nice bed of mizuna.( I use half a bag for one person)

3.  Put equal portions of udon on the bed of mizuna and drizzle with the sesame dressing.

4. Top with shrimp and edible flowers and eat with chopsticks! Make sure to stir in the dressing!

Homemade Sesame Dressing

*4 Tbspns Tahini

*2 Tbspns Soy Sauce

*2 Tbspns Mirin, a Japanese Sweet Wine but can be substituted with sugar  or maple syrup

*1 tspn of garlic paste

*1 squeeze of Sriracha Hot Chilli Sauce

Add all the ingredients together and mix well. If the consistency is thick, add a little water to thin it.
